Finally, a place to ask a burning question. How do I make lovely, rich, spiced, melting saag? I have tried several recipes from cookbooks I own - recipes from Madhur Jaffrey, Julie Sahni, Nelam Batra, and none measure up. I end up with something that is oddly grainy and a little bitter, which is nothing like the saag I have eaten in so many restaurants. I suspect I may not be cooking the spinach long enough, but that's not the only issue as flavor seems to be off as well.
